Grilled Chicken and Bacon Salad

Ingredients

For the salad:
6 cups chopped Romaine lettuce
2 chopped chicken breasts, grilled
8 slices cooked bacon, chopped
1 cup cherry tomatoes, halved
2 avocados, sliced
4 oz crumbled feta cheese
2 tablespoons red onion, chopped
2 cups of croutons

For the dressing:
1/2 cup extra virgin olive oil
1/4 cup white wine vinegar
2 cloves garlic, minced
1 diced jalapeño
2 teaspoons honey
1 teaspoon Dijon mustard
1/4 teaspoon kosher salt and pepper

Instructions

1. Place the lettuce in a large bowl or on a large platter. Arrange the chicken, bacon, tomatoes, avocado slices, and crumbled cheese in lines over the greens. Garnish with onions, croutons, and season with salt and pepper, to taste

2. In a small bowl whisk together the olive oil, vinegar, garlic, jalapeño, honey, mustard, salt, and pepper. Drizzle the dressing over the salad and serve immediately.
